I'm always wishing I had friends over more. I've recently realized the first step is actually INVITING them. So on a whim, I asked a friend and her son over at the last minute for dinner (I made my famous Chicken Diablo*, which is famous for being one of the few things I know how to cook).
It was fun having people on a weeknight for no reason ... although somehow we lost track of time and we stayed up until 1 AM.
It wasn't so much fun this morning getting up.
But maybe if I make a point to do it more often, I'll get the timing down better.
Chicken Diablo
thinly sliced chicken breasts
Dijon mustard
red pepper flakes
bread crumbs
Spread a thin layer of mustard on one side of the chicken breast, shake on red pepper and coat in bread crumbs. Turn it over and repeat. Fry in an oiled pan a few minutes per side until cooked through inside & crispy outside.

There's nothing sweeter than having friends over :)! I love having long conversations, laugh all night long...but only on weekends, cause on weekdays is a mess to get up at sunrise (as you're realised lol)!
